PRIMIVERA PASTA SAUCE 
1 onion, sliced
2 cloves garlic, chopped
1/4 lb. Shitake mushrooms, sliced
3 tomatoes, chopped
1 sm. eggplant, diced or cubed
1 can chopped black olives
Basil
Italian seasoning
Salt & pepper
1/2 - 1 stick butter

Saute onions and garlic in olive oil. Add mushrooms, tomatoes, eggplant, olives and seasonings about 10 minutes or until onions are transparent. Add butter, melt. Serve over pasta.
