TAFFY APPLE SALAD | |
1/2 c. sugar 1 tbsp. cornstarch 2 tbsp. lemon juice 1 egg, beaten 1 (20 oz.) can pineapple chunks 1 (8 oz.) carton whipped topping 3 med. red Delicious apples, cored & chopped 2 c. miniature marshmallows 1 1/2 c. salted peanuts In saucepan, mix sugar, cornstarch, lemon juice, egg and juice from pineapple. Cook over low heat, stirring constantly, until mixture thickens, about 4 to 5 minutes. Cool. Stir in whipped topping. In large bowl, mix apples, pineapple chunks, marshmallows and peanuts. Toss with dressing and refrigerate 2 to 3 hours. |
