UNBELIEVABLE OAT-BRAN MUFFINS
(LIGHT)
 
1 1/2 c. oat bran flour
1 1/2 c. quick oats
1 c. flour
1/4 c. sugar
1/3 c. wheat bran
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 egg whites, raw
16 oz. canned crushed pineapple in own juice (fruit and juice used)
2 c. mashed bananas
1/2 c. vegetable oil
1/4 c. honey
1 tbsp. vanilla

Mix dry ingredients together. In a separate bowl, mix wet ingredients. Combine the two mixtures and mix gently. Spray muffin pan with non-stick cooking spray and bake at 350 degrees for 20-25 minutes. Makes 30 muffins. One muffin = 110 calories, 3 g. fat, cholesterol 0.
