OAT BRAN MUFFINS 
2 c. 100% oat bran
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. skim milk
1/3 c. honey
1/4 c. salad oil
1 c. seedless raisins
2 egg whites

Mix bran, baking powder, spices, and set aside. Mix milk, honey, oil, and egg whites together. I beat them with a wire whisk to fluff egg whites; stir into dry ingredients and fold in raisins. Spoon into muffin cups. Makes 12. Bake 17-18 minutes until done at 425 degrees. If batter is too thick add more milk.
