CHOCOLATE CHIP OAT BRAN COOKIES 
2 c. all-purpose flour
1/2 c. oat bran
1 tsp. baking soda
1/2 tsp. salt
3/4 c. firmly packed brown sugar
3/4 c. granulated sugar
1 1/2 stick butter, softened at room temperature
2 eggs
1 tsp. vanilla
12 oz. semi-sweet chocolate chips
1 c. chopped nuts

In food processor, process softened butter and sugar until creamy. Add eggs and vanilla, process until well blended. Add dry ingredients and blend until smooth dough. Fold in with fork the chips and chopped nuts until well distributed in dough.

Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Do not over bake for a chewy cookie. Makes about 6 dozen 2-inch cookies.

While the recipe sounds like Toll House cookies, these are sensational -- not too sweet and nicely chewy. I just hope they are providing a lot of fiber!
