SWEET POTATO CAKE 
2 c. all-purpose flour
2 c. sugar
2 tsp. baking soda
1 tsp. baking powder
2 tsp. ground cinnamon
1 tsp. pumpkin pie spice
1/2 tsp. salt
1 tsp. vanilla
4 eggs
1 c. vegetable oil
1 can (18 oz.) vacuum pack sweet potatoes, drained & mashed or 2 c. mashed cooked sweet potatoes (pumpkin can be used)
1 c. chopped nuts

Heat oven to 350 degrees. Grease and flour 12 cup Bundt cake pan or tube pan, 10 x 4 inches. Beat all ingredients in large bowl on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 3 minutes.

Pour into pan. Bake until wooden pick inserted in center comes out clean, 60-70 minutes. Cool 10 minutes, remove from pan. Cool completely. Glaze if desired.
