CORN CHOWDER 
1 can corn
1/3 c. water
1/2 c. chopped onion
1/2 tsp. salt
4 c. milk
2 tbsp. butter
1 tsp. salt
1 1/4 tsp. pepper
3 tbsp. flour
1 slightly beaten egg
Chives (optional)
Paprika (optional)

In saucepan, combine corn, water, onion and 1/2 tsp. salt. Bring to a boil. Reduce heat and simmer, covered until corn is done, stirring occasionally. Stir in 3 1/2 cups milk, butter, 1 tsp. salt and pepper.

In bowl combine remaining 1/2 cup milk and flour and stir until blended. Add to corn mixture. Cook and stir until thickened and bubbly. Gradually stir about 1 cup of the mixture into beaten egg and return to mixture in saucepan. Cook over heat 2 minutes, stirring constantly. Remove from heat and serve. (Garnish with chives and paprika if desired.) You may also add potatoes to chowder if you prefer, this gives it more body.
