RICE LASAGNA 
1 1/2 c. long grain rice
1 lb. ground beef
1 med. onion, chopped
1/4 c. chopped sweet green pepper
1 (32 oz.) jar spaghetti sauce
1 egg, slightly beaten
16 oz. container cottage cheese
8 oz. Mozzarella cheese, shredded
1/2 c. grated Parmesan cheese

Cook rice. Coat 9x13x2 inch baking dish with vegetable spray. Brown beef, add onion and green pepper. Cook 2 minutes. Add spaghetti sauce. To beaten egg, add cottage cheese and Mozzarella. Spread half the meat sauce over bottom of baking dish. Spoon half the rice evenly over sauce. Top with half the cheese mixture. Repeat layers. Sprinkle top with Parmesan. Bake 50 minutes at 350 degrees. Let stand 10 minutes before serving.
