CHICKEN AND RICE 
2 c. cooked chicken, cut up
2/3 c. uncooked white rice
2 c. thin spaghetti, broken up
1/3 c. olive oil
1/2 c. sliced scallions
1 c. sliced red pepper
2 c. broccoli flowerettes
3 c. chicken broth
1/4 tsp. thyme
Salt and pepper to taste

Heat oil, add rice and spaghetti. Cook until golden brown. Add chicken broth and bring to a boil. Add all remaining ingredients and mix well. Cover and reduce heat. Simmer 30 minutes. Serves 6.
