ZESTY RICE LASAGNE 
1 c. uncooked long grain rice
2 eggs, slightly beaten
1/2 c. + 2 tbsp. Parmesan cheese, divided
2 c. shredded Mozzarella cheese
1/2 c. cottage cheese
1 lb. lean ground beef
1 (15 1/2 oz.) jar spaghetti sauce

Cook rice according to package. Cool slightly. Add eggs and 1/4 cup Parmesan cheese. Mix thoroughly; set aside.

Combine cheeses, reserving 2 tablespoons of Parmesan cheese; mix well. Brown meat and drain. Add spaghetti sauce and continue cooking until thoroughly heated. Spoon one half of rice mixture into 3 quart casserole dish. Cover with one half of cheese mixture. Top with 1/2 of meat sauce. Repeat layers. Top with remaining 2 tablespoons Parmesan cheese.

Bake at 375 degrees for 15 to 20 minutes or until heated thoroughly. Serves 6 to 8.
