RICE PILAF 
1/4 c. butter
1/2 c. vermicelli (spaghetti), broken
1/2 c. chopped green pepper
4 green onions, sliced
1 sm. can mushrooms, sliced
2 c. chicken broth
1 c. UNCLE BEN'S® converted rice
Salt & pepper

Melt butter in large saucepan. Add broken vermicelli and brown slowly. Add green pepper, onions, mushrooms, chicken broth and stir; add the rice, cover and cook over low heat for 1 hour (you may have to add more broth). Salt and pepper to taste. Serves 6-8.
