TOMATOES VINAIGRETTE 
3 lg. tomatoes, chopped
1/4 c. red wine vinegar
1 garlic clove, finely chopped
1/2 tsp. salt
1/2 tsp. dried oregano
Pinch of sugar
Freshly ground pepper
2 tbsp. olive oil
2 tbsp. chopped fresh Italian parsley

Combine first 7 ingredients in medium bowl. Mix in oil. Sprinkle with chopped parsley and serve. A great side dish for grilled chicken, steak or fish. Serves 4.
