TOASTED BUTTER PECAN CAKE 
2 c. chopped pecans
1 1/4 c. butter (use real butter)
3 c. sifted all-purpose flour
2 tsp. baking powder
1 1/2 tsp. salt
2 c. sugar
4 unbeaten eggs
1 c. milk
2 tsp. vanilla

Toast pecans in 1/4 cup butter in 350 degree oven for 20 to 25 minutes. Stir frequently. Cream 1 cup butter, add sugar, eggs, flour and milk alternately. Add 2 teaspoons vanilla and fold in 1 1/2 cups pecans. Bake in 3 (9 inch) layer pans. Bake at 350 degrees for 25 to 30 minutes. Ice.

ICING:

1 lb. powdered sugar
1/4 c. butter
4 to 6 tbsp. milk

Beat above until creamy. Add pecans and ice only between layers, not sides.
