6 new potatoes, med. size, scrubbed not peeled 1/2 c. lemon juice 1/3 c. olive oil 1 tbsp. salt (seems like alot, but keeps veggies moist) OPTIONAL - any 1 or more of these veggies: Garlic cloves, pressed Cubed zucchini Yellow squash Peppers Green beans Carrots Broccoli, etc. Wash and dry vegetables. Arrange in shallow baking dish just large enough to hold single layer. Drizzle with olive oil, then sprinkle evenly with salt. Set baking dish in center of 375 degree oven and bake for 1 hour. Stir gently every 20 minutes. 4 generous servings. |
