GREEN PEPPER STEAK 
1 1/2 to 2 lbs. lean round steak, beat with salt and pepper
2 tsp. salad oil
2 med. green peppers
1 sm. minced onion
1 clove garlic, minced
3 ribs celery, cut in strips
1/2 c. beef stock or consomme
1 tsp. soy sauce
2 tbsp. cornstarch
Hot cooked rice (white or long grain)

Cut steak into thin strips. Brown in oil in skillet and cook until tender. Saute peppers, onion, garlic and celery until partially tender; add to steak. Combine beef stock, soy sauce and cornstarch; add to steak, stirring until slightly thickened and begins to simmer. Serve immediately over rice.
