PEPPER STEAK 
1 lb. lean round steak (1/2 inch thick)
1 tbsp. paprika
2 tbsp. butter
2 cloves of garlic, crushed
1 1/2 c. beef broth
1 c. sliced green onions, including tops
2 green peppers, cut in strips
2 tbsp. cornstarch
1/4 c. water
1/4 c. soy sauce
2 lg. fresh tomatoes, cut in eighths

Pound steak to 1/4 inch thick and cut into 1/4 inch wide strips. Sprinkle with paprika and let stand while preparing other ingredients. Using a large skillet, brown meat in butter. Add garlic and broth, cover and simmer 30 minutes. Stir in onion and green pepper, cover and cook 5 minutes longer. Blend cornstarch, water and soy sauce, stir into meat mixture. Add tomatoes and stir gently. Serve with rice.
