GREEN PEPPER STEAK 
1 lb. beef round steak or beef cubes
1 tbsp. paprika
2 tbsp. butter
2 cloves garlic, crushed
1 1/2 c. beef broth
1 c. onion, sliced
2 green peppers, sliced
2 tbsp. cornstarch
1/4 c. water
1/4 c. soy sauce
2 lg. tomatoes, sliced

Pound steak to 1/4" thickness. Cut into strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients. Using a large skillet, brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes. Stir in onions and green peppers. Cook 5 minutes more. Blend in cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring until clear and thickened about 2 minutes. Add tomatoes and stir gently. Serve over rice. Makes 6 servings.
