APRIL'S SWEET WALDORF SALAD | |
1/4 cup sugar 2 tsp. lemon juice 1 tsp. salt 2 cups cubed apples (I like to use red & green) 1 cup seedless grapes, cut in half 1 (8 oz.) can diced pineapple, drained (about a cup) 1/4 cup mayonnaise 3/4 cup whipped cream (hand whipped heavy cream works best) In a large mixing bowl, combine sugar, lemon juice and salt. Add apples, grapes and pineapple (remember to work fast to avoid browning). In a separate bowl, fold mayonnaise into whipped cream, then fold gently into fruit mixture. Add more sugar, salt, or lemon juice to your liking. Chill for at least 1 to 2 hours. Serve in lettuce lined bowl. Makes approximately 6 servings. Submitted by: April M. Franklin |
