HARVEST CAKE 
2 c. sugar
4 c. chopped apples
2 eggs
3 c. sifted flour
2 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 c. salad oil
1 tsp. vanilla
1 c. chopped nuts

Mix sugar and apples; let set 1 hour. Add eggs; stir in remaining ingredients. Mix well and beat for 2 or 3 minutes. Add nuts. Pour into a large greased and floured tube pan.

Bake 1 hour at 325°F until cake tests done.

Yield: 10 to 12 servings.

Self-rising flour can be used.
