HARVEST APPLE CAKE | |
2 cups sifted all-purpose flour 1 cup sugar 1 1/2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. nutmeg 1/4 cup brown sugar 1/2 cup shortening 1 cup apple juice 1 1/2 cups finely chopped pared apples 2 eggs 1/2 cup raisins 1/2 cup chopped California walnuts Sift together first 6 ingredients into mixing bowl. Add brown sugar. Add shortening, apple juice, and chopped apple; beat until smooth, about 2 minutes at medium speed on electric mixer. Add eggs; beat well. Stir in raisins and nuts. Bake in greased 9x13x2 inch pan in moderate 350°F oven for 30 to 35 minutes or until cake tests done. Let cool. |
