HARVEST CAKE 
4 c. apples, chopped fine
2 c. sugar

Mix and let stand 1 hour

3 c. flour
2 tsp. baking soda
1 tsp. salt

1 c. Mazola oil
2 eggs, slightly beaten
1 tsp. vanilla
1 c. chopped nuts

Don't mix long. Bake in oblong pan, greased and floured. Bake at 325 degrees for 45 to 60 minutes.

ICING FOR HARVEST CAKE:

1 c. brown sugar
1 c. canned milk
2 tbsp. butter

Cook in saucepan 8 minutes. Pour over cooled cake. While still warm, sprinkle 1 can coconut and 1 cup nut meats. OR 5 minutes before cake is done, sprinkle with brown sugar and cinnamon.
