HARVEST APPLE CAKE | |
2 McIntosh apples, diced 1/2 cup (1 stick) unsalted butter, softened 1 cup raw cane sugar 1/4 cup light brown sugar 2 large eggs 1 tsp. good-quality vanilla extract 1 1/2 cups all-purpose flour 2 tsp. baking powder 1/4 tsp. salt 1 tbsp. cinnamon 1/2 tsp. grated lemon rind Preheat oven to 350°F. Peel and dice and apples. Set aside. Cream butter and sugars together in large mixing bowl with electric mixer on medium speed (mixture will look lumpy). Add eggs and vanilla and mix until fluffy. Add flour, baking powder, salt, cinnamon, and lemon rind. Mix until just combined. Fold in diced apples. Bake in square glass pan at 350°F for 35 minutes or until toothpick inserted in center comes out clean. Cool and enjoy! Serves 8. Submitted by: Lindsay L. |
