SWEET POTATO-HONEY BALLS 
2 1/2 c. mashed, cooked or canned sweet potatoes
3/4 tsp. salt
Dash of pepper
5 tbsp. melted butter, divided
1/2 c. miniature marshmallows
1/2 c. honey
1 c. chopped pecans

Combine potatoes, salt, pepper and 2 tablespoons butter; stir in marshmallows. Chill. Shape potato mixture into balls, using 1/4 cup for each. Combine 2 tablespoons butter and honey in small heavy skillet; add potato balls one at a time, quickly coating each with glaze. Roll potato balls in nuts, and place in a greased shallow casserole dish. Drizzle with remaining butter. Bake at 350 degrees for 15 to 20 minutes. Yield: 10 servings.
