FUKINI 
10 oz. fuki
A sheet of dashi kobu

DASHI (Broth) :
5 tbsp. sugar
3 tbsp. soy sauce
1 tbsp. mirin

Boil 4 cups of water and put dashi kobu in for 3 minutes. Remove kobu and add sugar, soy sauce, mirin and stir. Continue to cook low. Peel fuki and boil it in another pot for 30 seconds. Cool it off with water. Cut about 2 inch long and boil with dashi broth for 10 more minutes.
