THREE RECIPES FOR ONE CHICKEN 
These recipes make enough for 5 people. If there are more people, use 2 chickens.

RECIPE 1:
5 pieces chicken
3 tbsp. flour
1 tsp. salt
1/2 c. fat
1 c. water

RECIPE 2:
Other pieces of chicken
1 tbsp. salt
4 c. water
1 apple (diced)
1/2 c. pickles (chopped)
1/2 c. mayonnaise

RECIPE 3:
Gizzard
Liver
4 c. chicken broth
2 c. rice
Water

RECIPE 1: SMOTHERED CHICKEN:

Put 3 tablespoons of flour and 1 teaspoon salt in bowl and mix. Cut up chicken. Fry only 5 pieces. Roll chicken in flour. Put in 1/2 cup of fat in a frying pan. Heat fat. Put chicken in frying pan. Brown both sides. take pan off heat. Let it cool about 5 minutes. Add 1 cup of water. Cover fry pan. Cook on low heat about 30 minutes.

RECIPE 2: CHICKEN SALAD:

Put other pieces of chicken in a boiler. Cover with water. Add 1 tablespoon salt. Cook until chicken is tender (about 30 minutes). Let meat cool a few minutes. Pull all of it from bone. Put chicken broth, gizzard and liver in a jar (cover). Place in refrigerator. Cut chicken in small pieces. Mix the chicken, apple, pickles and mayonnaise. Put in refrigerator. Use it to make sandwiches or plain.

RECIPE 3:

Add enough water to jar of chicken broth to make 1 quart (4 cups). Dice the gizzard and liver. Put in boiler with broth. Bring to a boil. Put 2 cups rice in the boiler. Stir. Put lid on boiler. Turn heat to low. Cook about 20 minutes. The rice will be tender. No water will be in the boiler.
