CREOLE JAMBALAYA 
1/2 c. leftover chicken or turkey, diced
1/2 c. smoked sausage or Chorizos, diced
3 fresh tomatoes, chopped fine or 2 sm. green peppers, chopped
1 tbsp. butter or oil
2 onions, chopped fine
1-2 cloves garlic, chopped
1/2 tsp. cayenne pepper
1/2 tsp. ground thyme
2 bay leaves
3 c. beef broth
1 1/2 c. rice, washed
3 tbsp. chopped parsley

In a deep pot, saute sausage over medium heat until well browned. Transfer to a plate. Pour off drippings. Add butter and onion and heat on medium-low about 2 minutes. Add garlic; cook about 3 minutes. Add green pepper, tomato, and seasonings; reduce heat to low. Cook, uncovered, 15 minutes. Add sausages, chicken, rice, and broth. Bring to a boil, then lower heat. Cover and simmer until the rice is tender, about 30 minutes. Serves 6.
