SAUSAGE CHEESE BALLS 
2 lb. (32 oz.) Jimmy Dean sausage (uncooked)
1 1/2 c. Bisquick
16 oz. shredded Cheddar cheese
1/2 c. finely chopped onions
1/2 c. finely chopped celery
1/2 tsp. garlic powder

Preheat oven to 375°F. Mix all ingredients. Form into 1-inch balls.

Bake 15 minutes on ungreased cookie sheet, until golden brown.

Sausage Cheese Balls can be frozen uncooked. For a firmer texture, add an extra 3 cups of Bisquick and an extra 2 cups of shredded cheese to the ingredients listed.

Yield: 6 dozen.

I tried this recipe about 4 years ago and it has become a holiday tradition. I use 1 pkg of hot & 1 pkg of regular sausage to give it a little extra flavor without being too spicy for the kids & I use a total of 3 cups bisquick to get the perfect texture without being dry. I highly recommend a small cookie scoop (scrape against the side of the bowl to get the flat bottom so they don't roll & to get the perfect size & uniform meatballs) Makes roughly 9 dozen using the scoop as measurement & the extra bisquick. I pre-freeze these on a cookie sheet then bag with baking instructions.
