RUBY CAKE | |
1 1/2 c. sugar 2 eggs 1/2 c. salad oil 2 c. sifted flour 1/2 tsp. salt 2 tsp. baking soda 1 can fruit cocktail & juice 1/2 c. coconut 1 stick butter 3/4 c. sugar 1/2 can milk 1 tsp. vanilla 1/2 c. chopped nuts (or coconut) Preheat oven at 350 degrees. Grease and flour a large baking pan. Combine the first 6 ingredients and beat until mixed well. Stir in fruit and pour into the baking pan. Sprinkle with coconut. Bake for 45 minutes. Remove from pan and cool. While cake is cooling mix the remaining ingredients and spread over cooled cake. |
