FRUIT CARROT CAKE 
1 lb. candied mixed fruit
1 c. chopped nut
1/4 c. flour (reserve to coat fruit and nuts)
1 3/4 c. sugar
1 1/2 c. salad oil
2 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda (omit if self-rising flour)
2 c. grated carrots
4 eggs

Sift together all dry ingredients. Mix sugar and oil, add dry ingredients, stir until wet. Now add carrots, stir in, then add eggs, one at a time, beating on low speed or by hand until well mixed.

Now mix fruit, nuts and flour to coat fruit and nuts, add to mixture and stir by hand until well mixed. Pour into greased floured tube pan and cook 1 hour or until browned. Cook at 325 degrees.
