FRUIT CAKE | |
1 c. salad oil 1 1/3 c. sugar 1/4 c. honey or molasses 4 eggs 2 c. flour 1 tsp. baking powder 2 tsp. salt 2 tsp. cinnamon 1 tsp. nutmeg 1 c. orange juice 1 c. more flour 2 2/3 c. raisins 2 c. dates 2 c. candied fruit 1 c. nuts Heat oven to 275 degrees. Spray loaf pans with vegetable spray. Mix oil, sugar, molasses, and eggs. Beat 2 minutes. Sift together 2 cups flour, baking powder, salt, spices, stir in alternately with orange juice. Mix 1 cup flour into fruit and nuts until completely covered. Pour batter over fruit, mixing thoroughly. Fill pans. Place a pan of water on lower rack. Bake 2 1/2 to 3 hours. After baking let stand 15 minutes. Wrap tightly with foil, store in a cool place to ripen. |
