HARVEST POTATOES 
32 oz. frozen hash browns, thawed
1 can cream of chicken soup
8 oz. sour cream
8 oz. American or Cheddar cheese, shredded
1 stick butter, melted
1 med. onion, diced

TOPPING:

2 c. cornflakes or 1 sleeve Ritz crackers, crushed
1/2 stick melted butter

Combine all ingredients in greased 9 x 13 inch dish. Top with topping mixture, then drizzle melted butter over top of that. Bake at 350 degrees for 45 minutes.
