DOUBLE ONION SOUP 
2 tbsp. butter
2 c. sliced onions
2 c. thoroughly washed leeks (whites only)
1/2 c. diced red peppers
1/2 c. diced yellow peppers
2 tbsp. chopped Italian parsley
2 pkg. instant beef broth or seasoning
1 qt. water

In 2-quart saucepan, melt butter; add onion and leeks and cook, stirring occasionally, until softened, about 5 minutes. Add remaining ingredients, stir to combine and bring to a boil. Reduce heat and let simmer until flavors blend, about 15 minutes.
