CREAM PUFFS 
1 c. flour
1/2 c. shortening (Crisco)
3 eggs
1/2 tsp. salt
1 c. water

Put water in pot and bring to boil. Add shortening and salt. On low heat add 1 egg at a time until it comes away from pot and stiff. Then drop teaspoon on greased lightly.. Bake at 425 degrees for 25 minutes then shot oven off. Let it remain for 5 minutes in oven. This will dry inside of puffs. When cool fill with pudding or Ricotta chocolate chips and powder sugar.
