HOMEMADE NOODLES 
2 1/2 c. all-purpose flour
1 egg
1 c. water
1 tsp. salt
2 qts. water
2 tsp. salt

Bring 2 quarts of water and 2 teaspoons salt to a boil. Sift together flour and 1 teaspoon salt. Combine 1 slightly beaten egg with 1 cup water in bowl and mix. Gradually add flour mixture to egg mixture, stirring until smooth. Additional water may be added if needed, but batter should be very thick. Spoon a portion of the batter onto a small cutting board and cut into small pieces. Drop pieces into the boiling water. Cook only one layer of noodles at a time. Do not crowd. When noodles rise to the surface, boil 5 to 8 minutes. Remove with slotted spoon. Continue process until all noodles are cooked. TIP: Add salt after water boils. Water will boil faster.
