TEXAS RICE 
1/4 c. butter
1 c. green onions, chopped
4 c. rice, cooked
2 c. sour cream
1 c. cottage cheese
1 lg. bay leaf
1 (4 oz.) can green chilies, drained & chopped
Salt to taste
Pepper to taste
2 c. Cheddar cheese, grated

Saute onion in butter. Combine remaining ingredients. Put in lightly greased 12 x 8 x 2 inch baking dish. Bake in preheated oven at 375 degrees, uncovered, for 25 minutes. Serves 8.
