TEXAS RICE 
1 c. chopped ham
1/4 c. butter
1 c. chopped green onion
3 c. cooked white rice
1 c. sour cream
1/2 c. cream-style cottage cheese
1 lg. bay leaf, cut fine
1/2 tsp. salt
Dash of pepper
1 (4 oz.) can chopped green chiles
1 c. grated, sharp Cheddar cheese
Parsley and paprika for garnish

Fry ham briefly to remove any excess water. Drain. Add butter to pan and saute onions with ham. Remove from heat and combine with remaining ingredients. Toss lightly to mix. Bake at 375 degrees for 20 minutes. Serves about 6.
