ORTEGA RICE 
1 c. rice
2 c. sour cream
1/2 lb. Jack cheese
1 tbsp. butter
1 (4-6 oz.) can Ortega peppers, diced

Cook rice in salted water. Mix sour cream and pepper with rice. Put half of mixture in casserole. Cover with Jack cheese (cubed or grated), the remainder of rice. Dot with butter and grated cheese on top. Bake for about 30 minutes at 350 degrees or until heated through.
