GRANDMA'S ONE EGG CAKE 
Great for shortcake.

2/3 cup sugar
1/4 cup shortening
1/4 tsp. salt
1 tsp. vanilla
1 egg
1 1/2 cups all-purpose flour
1/2 cup milk
2 tsp. baking powder

Cream shortening and sugar. Add unbeaten egg. Add flavoring. Beat thoroughly. Sift measured flour; sift with salt and baking powder. Add alternately with milk to creamed shortening. Pour into greased loaf pan.

Bake for 35 minutes at 375°F.
