ONE EGG PINEAPPLE UPSIDE CAKE 
2 c. flour
1 c. sugar
3/4 c. milk
2 1/2 level tsp. baking powder
1 level tsp. salt
1 egg
1 stick butter
3/4 c. brown sugar
Pineapple slices
Cherries; optional

Combine the flour, sugar, milk, baking powder, salt, and egg all together and beat thoroughly.

Melt the butter in a skillet and add brown sugar. Place pineapple slices on the brown sugar and butter and pour the cake mixture in the skillet.

Bake at 325°F. for 30-40 minutes or until done. Cherries may be placed in the pineapple centers when the cake is turned upside down on the cake plate.
