PRINCESS GEMS COOKIES 
1 cup shortening
1/2 cup (1 stick) butter
2 tsp. baking ammonia, crush fine
2 cups sugar
2 1/2 cups sifted all-purpose flour
1 cup shredded coconut

Cream shortening and butter. Add sugar and crushed ammonia. Add flour and coconut. Roll into small balls.

Bake 10 minutes at 325-350°F. You can purchase bakers ammonia at the drug store.

PS I do one extra step - roll the cookie in powder sugar after it has cooled for a while

My mother found this recipe in the 40'in the Sunday paper and made them every Christmas. They are family favorites!! Our recipe is identical but she added the step of rolling into small balls, then pressing half pecan into bottom before baking. (20-25 minutes at 325°F) then sprinkling with powdered sugar after cooling a bit. Light and crisp, melt in your mouth.
