BARLEY SOUP 
1 lb. ground beef
1 lg. onion
2 cloves garlic, minced
3 carrots, sliced
3 stalks celery in 1/2 inch pieces
1/4 tsp. oregano
1/4 tsp. basil
1/2 c. pearl barley
6 c. beef broth (7 bouillon cubes, 6 c. water)
1 med. zucchini

Brown beef and onion and garlic. Add onion and seasonings. Add barley, broth and carrots and cook until carrots are done. About 15 minutes before serving add sliced zucchini. Serve with warm bread and cheese.
