CODFISH, AVOCADO, AND POTATO 
1 1/3 salt-dried cod fish
1 lg. potato, cut into chunks and cooked
1 med. onion, minced
1 sm. avocado, peeled and cut into chunks
1 lg. tomato or 2 med., halved, seeded, and cut into chunks
3 hard-cooked eggs, roughly chopped
1 c. olive oil
1/2 c. lemon juice or white vinegar
Salt and pepper to taste
French bread

Place cod fish in pan and simmer 15 minutes. Drain and repeat 3 times. (to eliminate last step, soak overnight in cold water). Shred cod fish with fingers.

Combine cod fish with potato, onion, avocado, tomato and eggs. Blend olive oil and vinegar (lemon juice). Combine with salt and pepper to taste. Toss mixture and serve with French bread.
