RITZY PECAN PIE 
20 Ritz crackers
1 c. sugar
1 c. pecans
3 egg whites
Pinch cream of tartar
1 tsp. vanilla
1/2 pt. cream, whipped

Preheat oven to 300 degrees. Roll crackers into fine crumbs. Add 1/2 cup sugar and pecans. Place aside.

In separate bowl, beat egg whites very stiff. Add 1/2 cup sugar, cream of tartar and vanilla. Fold all ingredients together. Pour into well greased pie pan. Bake at 300 degrees for 30 minutes. When cool, spread with whipped cream. Let stand 8 hours. Decorate with shaved chocolate.
