REFRIGERATOR POTATO ROLLS | |
1 c. mashed potatoes, instant may be used 1 pkg. yeast, dissolved in 1/2 c. tepid water 1/2 c. shortening 3 eggs, beaten 1/2 c. sugar 3 tsp. salt 1 c. scalded milk 5 c. plain flour Place shortening in separate bowl. Pour scalded milk over this. Stir until shortening is melted, then add dissolved yeast and mashed potatoes. Add eggs, sugar, and salt. Beat these ingredients. Sift before measuring 5 cups flour and add 4 cups of flour to mixture. Beat well. Add remaining flour, toss on board and knead it in. Place dough in bowl. Spread lightly with shortening. Chill dough at least 24 hours. It will keep well. Rolls may be made out as needed. Take out enough dough to make required rolls and put in warm place to rise, about 2 hours. Bake at 350 degrees until golden brown. |
