MASHED POTATO DINNER ROLLS
3/4 c. warm water
1 packet active dry yeast
1/2 c. mashed potatoes
2 tbsp. nonfat dry milk powder
3 tbsp. sugar
5 tbsp. butter, at room temperature
1 egg
1 tsp. salt
3 c. or more bread flour
Melted butter

Dissolve yeast in warm water. Set aside. Mix mashed potatoes, milk powder, sugar, butter, egg and salt together. Add yeast mixture. Add about 2 cups of flour and mix. Slowly add more flour until dough is formed and easy to handle. Knead for 5 to 7 minutes. Put in greased bowl, cover, and let rise about 1 1/2 hours.

Punch down dough and form into 3 balls. Roll each ball into a circle. Cut circle into 8 equal wedges. Starting at outside edge, roll up each wedge until the point is just rolled over the top. Curve each roll so that it has a crescent shape. Place on buttered baking sheet, cover and let rise about 30-45 minutes.

Bake in 400 degree oven about 10-15 minutes or until golden brown. Brush with melted butter.
