HAMBURGER POTATO ROLL 
1 tbsp. oil
1 med. onion, chopped
1 sm. clove garlic, crushed
1 lb. ground chuck
1 egg, slightly beaten
2 slices bread, crust removed
Water
1 tsp. salt
1/4 tsp. oregano, rosemary, or basil
Pepper
2 tbsp. dry bread crumbs
2 c. mashed potatoes, prepared
1 tbsp. minced parsley
3 strips bacon, optional

Preheat oven to 350 degrees. Saute onion and garlic in oil. To hamburger add onion and egg in mixing bowl. Soften bread in water; press out excess and add to hamburger. Add salt and spices.

Press meat out to rectangle 1/2-inch thick on waxed paper sprinkled with bread crumbs. Beat mashed potatoes with parsley and spread on meat. Roll meat and potatoes jelly-roll fashion.

Place in shallow baking pan. Put bacon on top, or baste during baking. Bake 1 hour and serve with brown sauce, mushroom sauce, or tomato sauce.
