SURPRISE CUPCAKES 
8 oz. softened cream cheese
1 egg
1/3 c. sugar
1/8 tsp. salt
6 oz. chocolate chips
1/2 c. chopped nuts
1/2 c. coconut
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1 tsp. vinegar
1 tsp. vanilla
1/2 tsp. salt
1 c. water
1/2 c. oil

Heat oven. For filling: Mix cream cheese, egg, sugar and salt until smooth. Stir in chips, nuts and coconut. For batter: Mix remaining ingredients in large bowl until smooth. Do not over mix.

Fill paper-lined cupcake tins 1/3 full with batter. Put about 1/2 teaspoon filling into center of batter. Bake until puffed and center is cooked about 30 minutes in a 350 degree oven. Makes 2 dozen.
