1 med. apple, pared, cored and sliced (3/4 c.)
1/2 c. chopped onion
1 (31 oz.) can pork and beans in tomato sauce
6 oz. smoked sausage links, thinly sliced
1/4 c. raisins
2 tsp. prepared mustard
Dash cayenne
2 tbsp. catsup
1/4 tsp. ground cinnamon

In small saucepan cook apple and onion in small amount of boiling water about 5 minutes or until crisp-tender; drain. In large mixing bowl stir together cooked apple and onion, beans, sausage, raisins, catsup, mustard, cinnamon and cayenne. Turn bean mixture into a 1 1/2 quart bean pot or casserole. Bake uncovered 1 - 1 1/4 hours at 375 degrees, stirring once. Serve with cornmeal muffins, if desired. Serves 8.
