"CRAZY" BAKED BEANS 
(Apples, raisins, and cinnamon add spicy sweetness to this hearty bean dish. Great at a picnic or outdoor barbecue!!)

1 med. apple, pared, cored, and sliced (3/4 c.)
1/2 c. chopped onion
1 (31 oz.) can pork and beans in tomato sauce
6 oz. smoked sausage links, thinly sliced
1/4 c. raisins
2 tbsp. catsup
2 tsp. prepared mustard
1/4 tsp. ground cinnamon
Dash cayenne pepper

In small saucepan, cook apple and onion in small amount of boiling water about 5 minutes or until crisp-tender; drain. In large mixing bowl, stir together cooked apple and onion, the beans, sausage, raisins, catsup, mustard, cinnamon, and cayenne. Turn bean mixture into a 1 1/2 quart bean pot or casserole. Bake, uncovered, in 375 degree oven for 1 to 1 1/4 hours, stirring once. Serve with cornmeal muffins, if desired. Serves 8.
