ONION SANDWICH BUNS | |
2 c warm water 1/4 c maple syrup 2 package dry yeast 1 onion, minced 1/4 c vegetable oil 1/8 teaspoon thyme 2 c whole wheat flour 1 c rye flour 3 c unbleached flour 1 T molasses 1 1/2 t salt sesame seeds (optional) Mix hot water and maple syrup. Sprinkle yeast into water and allow to proof while chopping onions. Saute onions in oil until golden, 5-7 minutes, sitrring frequently. Stir in yeast mixture, then all of the remaining ingredients. Knead dough 8 to 10 minutes; place in greased, covered bowl and allow to rise until doubled in bulk, about 1 1/2 hours. Punch down. Divide dough into 18 balls and flatten each ball into a 4-inch circle. Place on lightly greased pans. Allow to rise 1 hour. Preheat oven to 375 degrees. Lightly brush tops with an egg wash or melted butter and sprinkle with sesame seeds, if desired. Bake 25-30 minutes. |
